Lemon Rice
Lemon rice is a tasty dish and is especially made in the
south of India. It is simple to make. You can make it even when you are in a
hurry. This dish can be given as lunch for your kids and husbands, can also be
taken when travelling.
Serve 2-3
Ingredients
2 cups cooked rice
½ tsp mustard seeds
½ tsp cumin seeds
1 tsp urad dal
1 tsp channa dal
2 dried red chilies
2 green chilies chopped
2-3 tbsp peanuts
1 tbsp cashews (optional)
1 inch minced ginger
A generous pinch of turmeric powder
A generous pinch of asafoetida (hing)
Salt to taste
3 tsp oil
Few Curry leaves
Procedure
First you have to cook the rice. Take 4
cups of water for 2 cups of rice. To cook the rice adds a little oil and salt
to the water. Cook the rice.
When
the rice is cooked, spread this rice on a plate to cool completely.
Heat oil in a pan; add mustard seeds, cumin
seeds, once the mustard seeds start spluttering. Add urad dal , channa dal ,
ginger, chopped green chili, peanuts ,cashews nuts . Keep it in low flame and
fry them till golden brown.
Then add curry leaves, asafoetida and
turmic powder .Give a quick stir and add the lemon juice. If you want you can
you can add 1 tbsp of water and switch off the flame. Add the cooked rice and salt,
mix it well. Check for salt. Serve with papad.
Note
You can use any rice but make sure rice is
not sticky
Adding red chilies and green chilies
help a lot in flavor
