Palak Pakora

Pakora is one of the most delicious and easy snacks to make. Everybody likes pakoras no matter the season.  
Now its monsoon ….nothing beats the combination of some hot pakoras with a cup of steaming tea.  This is a very simple recipe and takes little time.



Ingredients:
 15 palak leaves
1 cup besan /chick flour
¼ cup rice flour
2 pinch cooking soda
1 tbps kalonji / Ajwain
2 pinch Asafoetida
Oil as need for frying
Salt to taste


Procedure   

Wash the leaves properly first to prepare the the pakoras.

Take a bowl and mix all the ingredients except oil and palak. Beat it untill it becomes smooth.

I have used ½ cup of water to mix 1 cup of besan

Leave the besan mixture aside for 10 minutes for fermentation.

Heat frying pan with enough oil, when it’s hot enough, dip the leaves one by one and drop them in oil. Fry both sides until it puffs up and turns crispy and golden. Sprinkle a little black salt.




Notes
Always take large Palak leaves when making palak pakora
Do not add a lot of baking soda; it will soak up the oil
