Aalu Ki Sabji ( Potato Curry)
It’s very simple and
easy, whenever I don’t feel like making anything I make aalu ki sabji and puri.
Last year when I was in Delhi, I held a small puja at my place. It was 2nd
august 2012. It was “Raksha Bandhan” that day.
After the puja was finished I had arranged aalu ki sabji and puri,
sweets, etc for them. It was a very festive atmosphere and everyone was
enjoying a lot. All my friends are very good cooks and are very humorous. Whenever I am with them I forget everything and
I miss all of them here. Let’s come back to the aalu ki sabji. When they were
eating the sabji with puri, everyone was asking for the recipe and I know they
can make it better than me. I was busy with the puja and serving everyone and wasn’t
able to give them the reciepe , they started teasing me by saying that “ Lipika
doesn’t want to give the recipe” hahaha .
I will never forget that day, it was incredible. Wish we could be together again. J Love you all
Ingredients J
4 medium sized boiled potatoes
¼ tbsp
Cumin seeds
2 whole red chilies
2 bay leaves
2 tbsp coriander powder
¼ tbsp
Red chili powder
¼
tbsp Turmeric powder
A
pinch Asoefoetida (hing)
1 tbsp roasted cumin powder.
Salt to taste
1tbsp Kasoori methi (Fenugreek leaves)
2 tbsp
oil
Coriander leaves for garnish
Procedure
Heat oil in a pan. Add cumin seeds, bay
leaves & whole red chili. Once the cumin starts to crackle add tomatoes
puree, hing & coriander powder. When the tomatoes start releasing oil add
salt, turmeric powder, red chili powder. Sauté for 2 minutes once the oil starts
floating on top of the spices add boiled potatoes (here I don’t cut the boiled
potatoes with a knife; I mash them by hand or Spatula and put in the pan). Now
give a nice stir, all potatoes should be coated nicely.
Now add 2 cups of warm
water. Cover it with a lid & cook for 10 minutes.
Taste salt, now add roasted
cumin powder and take kasoori methi in your plams, just rub it and sprinkle on
the top of the sabzi. (If you want you can put a pinch of MDH garam masala)
Aalu ki sabji is ready to be served with puri
or kachori
Note
You can use 1 tspn tomato puree & 1 dinner
spoon of fresh tomato paste. This will give it a good color.
