Mushroom Broccoli Bow-Tie Pasta


I always love to experiment in my kitchen.  I had broccoli and mushrooms in my fridge and decided to make pasta with broccoli and mushrooms. I didn’t use any sauce while making this pasta so it looks a bit dull but it turned out great since my kids loved it … Enjoy it!

Serve 2

Ingredients

300 grams bow tie pasta (can use any type of pasta)
8-10 florets blanched broccoli
5 garlic clove chopped
½ cup sliced mushroom
½ cup grated Mozzarella Cheese
Salt and pepper to taste
½ tsp chili flakes
1 tsp olive oil
½ tsp oregano
2 tsp Pistachios /Nuts (roasted powder)

Procedure

Boil the pasta

In a wide pan, boil 10 cups of water, 1 tsp of salt & oil.
When the water starts boiling, Put the pasta into the boiling water. Cook for 10-12 minutes, be sure that the pasta is firm
Immediately put the pasta under cold water. Drain it again and keep aside. Give the pasta a little shake so they don’t get stuck together.
Cut the broccoli into small bite sized florets. 
Again take 1 cup water in a pan
Bring water to boil and add the broccoli florets and steam for a few minutes, they should be crunchy. Keep aside.

In a pan dry roast nuts and pistachios until crispy. Grind it into a coarse powder.
Now in a large pan on medium heat add olive oil, chopped garlic sauté for 1 minute. Then add sliced mushroom, chili flakes & cook them for 2 minute. Add broccoli, salt, pepper powder and sauté.
Sauté till it shrinks & the color changes. Then add the cooked pasta along with oregano and give a quick stir .
Then add pistachios powder & grated  cheese ……..give a quick toss and switch off .
Serve hot and sprinkle cheese

Note

When you boil the pasta; it should not melt in your mouth; you should chew it in order to shallow them
