Vegetable Hakka Noodles / Restaurant Style

Vegetable Hakka noodles are loved by all. I make it at least once a week for my kids.
When I was in Delhi;
whenever my friends and I had gatherings, if there was a noodle dish on the
menu, I used to make it for the party. They loved it very much. Hakka noodle is
a Chinese dish cooked on high flame. Noodles with fresh vegetables, soya sauce…the
aroma of garlic fried in olive oil....its heavenly! It is very quick and easy
to make and perfect to serve with gravy of your choice. . I prefer it with
chilli paneer.
Serve 3
Ingredients
1 & ½ cup Hakka noodles
½ cup cabbage chopped lengthwise
1 medium sized carrot thinly sliced
1 medium onion thinly sliced
½ capsicum / bell pepper
chopped lengthwise
3-4 clove garlic chopped finely
3 tbsp spring onion chopped
finely includes both green and white part
1 tsp Vinegar
½ tbsp soya sauce
¼ cup tomato sauce
1 tsp green chili sauce
Black pepper powder as required
Salt to taste
3tbsp Olive oil
Procedure
Cook noodles in a large pot with 3-4 cups of
boiling water and cook them for 8 -10 minutes. Make sure it’s not over cooked.
Drain water and wash it to remove the excess starch and add 1 tsp oil and mix
well to avoid sticking
In a wok or pan, heat some oil. Add
chopped garlic, onions, spring onion and fry until slightly brown. Then add the
carrot, cabbage then sauté for a minute on medium high flame till it slightly shrinks
in volume and the raw smell of veggies is gone. Then add capsicum and sauté for
a minute.
I added capsicum later as it cooks faster compared to other veggies. Then
again keep in high flame and add soya sauce, give a quick stir. Now add green
chili sauce, tomato sauce and keep tossing them and add vinegar, required salt
and pepper powder.
Finally add cooked noodles and mix them
really well until all the noodles get nicely coated with sauce and veggies.
Serve hot with chopped spring onions
and sliced onion.
Note
Always fry on high flame. If you can, try tossing the veggies
in such a way that it catches fire. This gives the smoky flavor as in restaurants.
You can use any kind of noodles you want.
Whenever you make noodles keep your flame high, otherwise
it will be mushy.
