Vegetable Pulao with Black Chana Raita









This is a very easy to make recipe. If you are in  a hurry, need to eat something homemade and easy to prepare, this is the perfect dish. You can take this in a lunch box and have it for lunch, also give it to your kids and husbands for lunch. It tastes great with Black Chana Raita 

Serves 2

Ingredients
1 cup Basmati Rice
1 medium sized onion chopped length wise
Handful of mint leaves
½ cup Vegetables of your choice (I used 1 carrot, 5 beans and handful of peas)
3 cloves
1 inch cinnamon stick
3 bay leaf
2 green chilies
1 ½ cup water
1 tbsp oil
1 tbsp ghee

Procedure

Soak basmati rice in 1 ½ cups of water.
Cut the vegetables except peas into tiny pieces.
Heat ghee and oil in a pressure cooker and add jeera and all the spices one by one. When it splutters and gives a nice aroma add the chilies and onions .Fry till the onions turn brown.

 Add mint leaves and fry for a few seconds. Then add the chopped veggies.
Sauté for a few minutes. 
Then drain the water and add the soaked rice. Fry this for 2 minutes and then mix well until combined. Add required salt.
Now add exactly 1 ½ cup of water and allow it to boil. Close the lid of the pressure cooker and cook it until the cooker whistles twice.
