Bhindi Bhaji : Okra Fried Indian Style


Bhindi bhaji is a very popular and common dish cooked all over India. It tastes very good with roti. Kids love okra when it is cooked with masalas, garlic and onions, it has an amazing aroma. My kids are a big fan of this bhindi bhaji :)

Ingredients
300 grams chopped bhindi (okra)
1 medium onion chopped
2-3 garlic cloves chopped
1 medium tomato chopped
2 tbsp oil
¼ tsp turmeric powder
2 green chilies / 1 tsp red chili powder
2 tsp kasuri methi (fenugreek leaves)
Salt to taste
Procedure
Wash the okra well. Wipe the bhindi with a dry towel. This is a very important step to avoid stickiness after it cooks. Cut off both side (head & tail) of each bhindi and cut them into small pieces.
Now add oil in a frying pan or kadai on a medium flame. Then add chopped garlic. Let it cook for 30 seconds. Then add onion into it. Fry the onions till golden brown. Now add green chilies salt and chopped tomatoes. 
Sauté them for a couple of minutes till the tomatoes becomes soft.  Now add chopped bhindi , give a nice stir so all the masala get coated with bhindi. Cover it and let it cook. Do not forget to stir in between. 
Cook the bhindi on medium to low flame. When bhindi is cooked take kasuri methi into your palm and rub it on the top of cooked bhindi. Serve it hot.
You can serve it with any Indian flat bread like roti, paratha, phulka. or as a side with your dal/rice.
