Chicken Tikka / Roasted Chicken


Chicken Tikka is a traditional and very popular Indian chicken dish which is full of flavor and color. It is a nice combo with hung yogurt and all spices grilled on skewers. It can be eaten as an appetizer and evening snack. At my place this is the weekend menu. I never get bored making it. Last two days it has been raining here and I am in no mood to go out so I made my house into a restaurant. In my house Chicken Tikka falls under the “favorite food list”.   Enjoy!!!


Ingredients
300 gms boneless chicken cut into chunks
1 cup Hung yogurt
1 tsp garam masala powder
2 tsp chicken tikka masala powder
1 tsp Kashmiri red chili powder
1 tbsp Ginger garlic paste
2 tsp kasuri meethi (fenugreek)
1 lemon of juice
1 medium onion cut into cubes
1 capsicum cut into cubes (I used green, yellow capsicum)
 1 tsp Oil/ butter 
Pinch of red color
1 tsp Asafoetida / hing

Procedure
First marinate the chicken with hung yogurt, garam masala, chicken tikka masala, chili powder, ginger garlic paste, red color, asafoetida ,kasuri methi ,salt and  lemon juice. Mix all things very nicely. Make sure the marinate coats every pieces very well. Now add a tsp of oil and red food color and give a nice toss .
Now add cut onions and capsicum to this marinated chicken and mix them. Now the marination is all ready. Keep this refrigerated for 2-3 hrs.

Soak the wooden skewers in water for at least one hour before baking, which prevents the burning of the skewers.
After 3 hrs take it out and insert the chicken, onion, capsicum in skewers. I have put onion first, then capsicum, then chicken, you can do any of your choice.

 Brushing the oil on the top of chicken. It will give nice color...Meanwhile preheat the oven to 250 degree.
Now arrange the chicken in the baking tray and put this in the oven for 25-30 minutes.

 After 15   minutes take it out and turn it to other side again and brush some oil on the top of the chicken and put it in the oven for 10-15 minutes. Using little oil it will help chicken be soft otherwise chicken will become dry. Turn over the skewer until they are golden brown. Now the tikka is ready. Serve hot with any salad,  green chutney and sprinkle some chaat masala and lemon juice over the chicken tikkas and enjoy.
