Carrot Cake
Since Christmas is
approaching, I wanted to bake this carrot cake. So here I am with a delicious
carrot cake recipe. Carrot cake is moist, dense, soft and delicious; with
grated carrots, walnuts and cinnamon. The cake is very soft and yummy. I have
also added orange juice for an orange flavor. It was a big hit with my family

Ingredients
2 cups all – purpose flour
1 cup grated carrot
3 eggs
1/2 cup brown sugar
100 grams walnuts chopped
1 tsp baking soda
1 ½ tsp baking powder
½ tsp salt
1 tsp ground cinnamon
1 tsp ginger powder
2 tsp vanilla extract
1 cup oil (vegetable or canola oil)
¾ cup orange juice
Procedure
Grease the baking tray and the dust
flour.
Grate the carrots finely and keep
aside.
Preheat your oven to 360 F / 180 C.

In a separate bowl whisk the
flour, baking soda, baking powder, salt, and ground cinnamon, ginger powder and
keep it side

In a large bowl, beat eggs until
light and frothy. (I used electric beater)
Then add vanilla essence
Then slowly add orange juice and beat it well
Add brown sugar little by little and beat till the sugar dissolves.
Now gradually add white sugar and
beat until the batter is thick and light colored.
Then slowly add 1 cup of oil and
beat it well.
Add the flour mixture and beat just until incorporate.
Then mix in grated carrot and chopped walnuts…raisins (rub the dry fruits with dry flour so it doesn't sink to the bottom of the mixture
Evenly divide the batter between
the two prepared pans and bake 40 to 45
minutes or until a toothpick
inserted in the center comes out clean.
