KHANDVI / STUFFED KHANDAVI RECIPE



Stuffed Khandvi

Khandvi (Khandavi) is a mouth watering traditional popular snack item from the state of Gujarat, India. It's unique soft texture and mild flavor makes is a favorite of kids and adults. Ingredients
½  cup of gram flower or besan
½ cup curd
¾ cup water
1 tbsp ginger and green chilies paste (1 in ginger & 2-3 green chili)
¼ tsp turmeric powder
1tsp of mustard seeds
2 tbsp freshly grated coconut
½ grated carrot
A generous pinch of asafoetida or hing
6-7 curry leaves
Salt to taste
1 tbsp chopped coriander leaves
2 tsp oil



Procedure
Take gram flour, turmeric powder, salt, ginger, green chilies paste and hing . Mix it very well.


 Now add curd and water to this mixture. 





Mix properly and make smooth batter using a whisk or spatula.




Taking care that no lumps remains.


Pour batter into a heavy bottomed pan and cook on low flame. Keep stirring continuously to avoid lump formation. . (Don’t leave it for a single second)


Stir until the mixture thickens  and gets cooked, when it starts to leave the  side of the pan, it is ready.( it will take 7-8 minutes)

Do not let it over cook; otherwise you may not be able to spread it.



Transfer a large spoonful of batter over previously greased plate or thali. Then spread as thin as possible with the back of a large flat spoon.

Let it cool down completely. Now sprinkle grated coconut and carrot. Do not over stuff it because the  rolll will rip.



Cut the khandvi using a knife on each thali lengthwise (approx. 2 " in wide) into equal portions (as shown in the image)





Carefully roll each strip into roll and transfer them to a serving dish.



Heat 2 tablespoons of cooking oil in a small tempering pan and add the mustard seeds.




When the seeds crackle add curry leaves and green chilies and sauté on a medium flame for a few seconds.

Pour the tempering over the khandvis. 

Sprinkle shredded coconut and chopped coriander leaves. Serve with spoonful of green coriander chutney. Enjoy 


 Notes : if you don’t want you can avoid the  stuffing, just make it same way  without stuffing.
If your batter is not cooked  properly ,then you cannot roll the strips,
