Zafrani Pulao / Saffron Pulao / Kesar Pulao

Zafrani Pulao/ Saffron pulao   recipe  

 I make pulao at home frequently. I make this pulao whenever I feel like cooking something special as a one pot meal. This goes well with any kind of rich gravy but today I am going to serve it with matar paneer. My kids love this very much as well, even though they prefer Biryani more. At my mom's place it is cook for some special occasion, it is awesome. My mom doesn’t add onion, garlic , here I have add those. The taste is awesome.   My friend and her family called me to tell me they are coming, I was  thinking about what I should make for them, because I was running out of vegetables and it was raining here.  I don’t feel like going out to get something .Then I thought of making this, all the ingredients are available at home. So I made it and everyone liked it. You can serve it with any kind of non- vej item also.



Ingredients
2 cups basmati rice socked
2 tbsp ghee
10- 12 cashew nuts
2 tbsp raisins
2 black cardamom
1 inch cinnamon
2 cloves
2 bay leaves
1 medium onion chopped
1 tsp ginger garlic paste
½ caraway seeds
1 tsp salt 
Procedure

Wash rice twice and soak in just enough water to cover it for half an hour. Drain excess water.
Heat ghee in a pan add caraways seeds then add  bay leaves whole spices (cardamom, cinnamon, cloves) once it starts to splatter add cashew nuts, and raisins and stir for a few seconds.


 Now add chopped onion, sauté them till they are golden brown then add ginger garlic paste stir them. Now add rice and salt.



Here I used 1 tsp sugar (optional). Mix them nicely. Then add socked saffron.
Mix all ingredients nicely. Add 2 and ½ cups of boiling water and cover with lid. Let them cook.


Top it off with a little ghee.
For garnishing I used pomegranate seeds, you can if you wish.

For garnishing you can use fried onion.
