Chicken 65
Chicken 65 is a spicy, deep-fried chicken dish which
originated from Chennai (Madras), India. This is the perfect evening snack and
party starter.
The first time I had chicken 65 was at Biryani Pot; it was
amazing. As usual my younger daughter asked me when I was going to make it at
home. I made chicken 65 so many times before uploading the recipe because I
could not take pictures; they would already be eaten before I could take the
pictures. It is easy and all ingredients
are available at home.
Ingredients
500 gm
boneless chicken breast (cut into small bite sized pieces)
2 tbsp corn
flour
4-5 green
chilies slit length wise
1/2 tsp ajinomoto
1 tsp soya
sauce
½ tsp cumin
seeds
1 tsp red
chili powder
2 tbsp corn flour
¼ tsp red food
color (optional)
Few curry
leaves
¼ cup thick
plain yogurt
1/2 tbsp
lemon juice
Oil for frying
1 egg
½ tsp black
pepper powder
1 tbsp ginger
paste
1 tsp garlic chopped
½ ginger
chopped
Salt as required
Procedure
First
wash/clean the chicken and cut into small pieces. Then take chicken pieces in a bowl, add ginger garlic paste,
black pepper powder, lemon juice, salt, food color, corn flour, soy sauce,
ajinomoto and egg, mix everything well.
Allow it to rest for 3-4 hours atleast -
the more resting time the softer the chicken 65 will be.
Heat oil for
deep frying in a deep pan. Lower the flame, and add in the chicken pieces
slowly. (Do not over crowd the pan). Do not over-fry, fry until lightly golden
brown. Drain and place on a paper towel.
Repeat with rest of the chicken pieces.
Heat about 3 tablespoons of oil in a
saute pan or wok.
Add cumin seeds and let them splutter. Add in ginger,
garlic, green chilies, curry leaves and fry for a minute
Then add curd
and the remaining pepper powder, salt, chili/garlic paste,
ajinomoto,1 tsp soya
sauce.. Cook on low to medium flame for 3-4 minutes. Then add chicken to this paste and toss the chicken till the
yogurt dries up and the chicken absorbs the yogurt mix.
